Ice Cream Cake Recipe – Easy Ice Cream Cake Recipe

If you’re in the mood for an ice cream cake, but don’t want to spend a lot of prep time in the kitchen, this recipe really takes the cake! You can substitute sherbet or sorbet for the ice cream for a nice variation.

1 angel food cake (10 inches)

1/2 gallon ice cream of any flavor

Let the ice cream sit on the counter for a while until it softens enough for easy spreading (don’t let it melt).

Cut angel food cake into 2-inch pieces. Layer cake pieces in bottom of 9- or 10-inch tube pan. Using a large knife, spread a layer of the softened ice cream over the cake pieces. Add another layer of cake on top of the ice cream. Keep repeating the layers until you have used all of the cake and ice cream.

Place the cake in the freezer and freeze it for 2 to 3 hours. Before serving, carefully remove the cake from the pan and place on a serving plate. Top with your favorite ice cream sauce.

16 – 24 ice cream sandwiches

1 container (16 oz.) frozen whipped topping

1 jar (12 oz.) hot fudge topping

1 chocolate bar (1.5 oz.), grated

In a 9 x 13-inch baking dish, place half of the ice cream bars in the bottom of the dish, side by side. Spread half of the fudge over the ice cream bars. Spread half of the whipped topping over the fudge.

Place the remaining ice cream bars on top of the first layer and repeat with layers of chocolate sauce and whipped topping. Sprinkle grated chocolate on top.

Cover and freeze the cake for 1 hour. Keep the unused portion covered and frozen.

Scoop out 8 scoops of ice cream and place on a baking sheet, return the scoops of ice cream to the freezer and freeze for 1 hour or until firm.

In a shallow bowl or plate, combine the cornflakes and cinnamon. Roll each frozen ice cream scoop in half of the cornflake mixture, return to freezer for 15 minutes.

In a separate plate, beat the egg whites until foamy. Dip each frozen ice cream scoop into the egg whites, then roll them in the remaining cornflake crumbs. Make sure the ice cream is completely covered. For a thicker layer, repeat the process. Freeze the ice cream scoops for 3 hours or until they are very firm.

When ready to serve the ice cream, heat cooking oil in a deep fryer or heavy saucepan to 375 degrees.

Place each scoop of ice cream in a wire fry basket or slotted spoon. Fry one or two of the balls at a time for 10-15 seconds, until the coating is a golden brown. Drain on paper towels.

Serve immediately. Garnish with whipped topping, drizzled honey and maraschino, a cherry on top.
